Weed control is usually by hand. Fungicides may be applied to control fungal infection. The flowers must be removed in order to promote tuber growth.
Harvesting occurs in February or March, 8-9 months after planting. Tubers are dug by hand, washed and disinfected to prevent mould. Many growers peel the skin off with a special knife, but some herbalists believe that there is no advantage to removing the skin. The tubers are then dried down to about 25% of their wet weight. The dried “fingers” are then graded and packed.
